Don't Worry

It's been a tough week for me. There is lots going on. This post has nothing to do with nutrition, but I felt the need to share what's been on my heart. The last few days I've taken time and just slowed down. I've spent lots of time in prayer and reading my bible. Being a Christian does not mean life is going to be perfect. It's rough! I've been clinging to God and trusting HARD in His plan. He's our healer, redeemer and gives us strength when we are weak. I am thankful that God has given me a future husband who is a lover of Christ. I have been praying for our future together. I start to worry about things that can happen, but I quickly remind myself that God is in control. He is our rock and we can get through anything with Him by our side. I was reading a blog post the other day, and the girl was talking about worry. And she said I worry about this and that, but how many times in the bible does God say "do not fear" or "do not worry", A LOT! Let go of your worry, if it's Gods plan there is always a way. Which has been hard for me! This last week I have been reading in Romans and this verse popped out at me. It was literally what I was feeling.

Romans 15:13 "May the God of hope fill you with all joy and peace as you trust in Him, so that you may overflow with hope by the power of the Holy Spirit."

It's funny how God speaks to you. I challenge you that if you're feeling stressed, worried, inpatient that you would let God take over and give it all to Him. He is a good, all the time. If your struggling, I am praying and if you want to chat, know that I am here too.

love,

Annika

Life Update....

Hello friends!

It's been a couple weeks since I've been able to blog, but today I'm sharing my life! Haha! It's been quite a busy summer and I know that it's ending is even busier...

Friends! I'm getting married in almost a month! How crazy is that!? It still doesn't feel surreal but it's exciting and I'm getting more anxious as the weeks go by! We are in this wedding planning thing 100%. We have pretty much everything DONE. Give me all the praise hands! I so wanted to share with you guys every thing I've done, but it's hard to pull out a camera when I'm trying to make decisions. Ha! I'm thinking I will do a post with where I've gotten all my wedding stuff from and easy ideas to save you some money that I found out about :). If you have any questions in the meantime, please ask as I would be happy to answer them!

Our cute little home has become a PROJECT! We are having an adventure ripping stuff out, trying to put new stuff in and trying to stay on a budget as we won't be living here for very long. We faced some electrical issues and plumbing problems but they were both easy fixes. Once we're married, I will start a "home" tour and design tab but until then it is what it is! Our t.v is hanging out on a coffee table sideways because that's just what life is right now. Life is a little sideways :).

I graduated from CWI this last May, but I am starting at ASU this fall in the NUTRITION program! I am literally so excited to finish my degree in something I love and am so passionate about. I hope to grow in nutrition and use this knowledge for my blog and my future career wherever God places me.

I hope y'all are having a great summer! If you have wedding, food, home or life questions please ask me!

lots of love,

annika

Quinoa Bowls

I shared a couple weeks ago about my creation of the quinoa bowls.  I absolutely love them and how easy they are to make!

What you'll need:

  • Quinoa
  • Strawberries
  • Cherry Tomatoes
  • Cucumber
  • Apples (optional)
  • Feta Cheese
  • Eggs
  • Dressing (your choice!)

Cut up all your fruits and veggies. Cook your quinoa according to your package directions. Boil your eggs (I boil them and then turn them down to simmer for about 20 minutes). Once the eggs are done, slice them up. Then combine everything together and add your choice of dressing on top!

Shane likes to have chicken on his, so I buy pre-cooked chicken for him to place on top :). Once in awhile I will make him chicken, but it's more convenient when it's already cooked!

It can't get much simpler than that friends!
