Weekly Vegetable - Cucumber

Hey there Wednesday, it's good to see you! This weeks veggie is cucumbers! Cucumbers were always planted in my moms garden and it seems like I can never get enough of them! They are so delicious whether they're plain, seasoned, grilled, mixed or infused in water.. my favorite way is sliced up to munch on as a snack.

The most nutritious part of almost any vegetable is the skin and in cucumbers it's the skin and seeds! Cucumbers are low in calories, fats, carbs and sodium! They contain your potassium, fiber and vitamin C. Cucumbers are majority of water, so they are the perfect hydrating food out there. (source here)

I love cucumbers dipped with a hummus, ranch, or onion dip. They are good topped with some oil and vinegar and seasonings. They can add a soft taste in salads or can easily be eaten plain! They look beautiful infused in ice water... or pretty hanging on the side of a fun drink! Cuc's are even great for putting over your eyeballs for a little facial ;). I mean, they are an awesome veggie!
